[RECIPE] Grab & Go Granola Bars

I love breakfast.

Seriously. It’s an obsession. I could skip any other meal of the day but this girl is serious about her morning grub time. Since I’m fortunate enough to work from home, I usually cook breakfast every morning. (Sorry but cold stuff–yogurt, a bowl of cereal, or the like–just doesn’t cut if for me). However, on days that are jam-packed with client meetings and errands, I need something portable that I grab and go. Don’t think for one second that I forgo breakfast just because I’ve got things to do.

These granola bars are packed with a ton of goodies that’ll keep you full and give you loads of energy throughout the day. It’s a good idea to keep a few stashed away in your bag if you’re a road warrior like me.

 

INGREDIENTS

2 cups rolled oats

½ cup protein powder (any flavor of your choice)

Pinch of Kosher salt

½ cup chopped dried strawberries

2 tablespoons chia seeds

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ cup peanut butter

¼ cup raw honey

½ cup almond milk

1 teaspoon vanilla extract

Coconut oil to grease the baking pan

 

DIRECTIONS

Preheat oven to 350 degrees. Grease a  11×7 with coconut oil and set aside.

In a large bowl, combine all the dry ingredients and, with a large spoon, mix thoroughly.

In a separate bowl, mix the wet ingredients then add the dry ingredients. Stir until combined.

Pour mixture into greased baking pan and spread evenly and firmly using either your hands or a spatula. Bake for 20 minutes, let it cool completely for about 40 minutes before cutting into bars. (You must wait the full 40 minutes before cutting or you will end up with granola crumbles.)

After cutting into bars, store in an airtight container.
